I have not tried buckwheat groats yet. I generally stick to grains, but I did use quinoa in one batch (mixed with millet and einkorn), and it worked well.

Yes, indeed. One of my favorite tempeh combinations is black lentils and purple barley. Here's one such batch:

i've always been impressed by @Leisureguy, who makes his own tempeh from scratch. he has a blog, on which he posts about cooking, and specifically interesting (to me, at least) are his tempeh recipes. he uses all kinds of legums and grains, unlike what you tend to find in stores

Soy Tempeh finished
The first tempeh I made, about 6 years ago, was soy. I do have an attachment for my mixer to crack the beans.
Total fermenting time was about 36‐40 hours.
Talk about being forgiving! I let it get too hot the first night (46° C) but it recovered and produced beautiful blocks.

Tempeh made from du Puy lentils
I really like this one. The texture is lovely and chewy, with a slightly nutty flavour. I like it just air fried, no flavouring needed.
Total fermenting time was about 36‐40 hours.
I doubled the quantity of lentils but kept the amount of lactic acid and tempeh starter the same.

discovered some interesting people who patented (now public domain?) a tempeh production technique using steel trays and a covered water bath.
This seems to beat the major problems with not disappointing heat and bad air flow with regular large sheet production of tempeh
