A frittata rolled with #mackerel #fish, sofrfitto (minced and sautéed carrots, celery, and onion), tomato paste, and #curry powder. The mixture is layered into a frittata (a large omelette of whipped eggs that are fried in olive oil), and then rolled.

few will remember that in the 90s there were a series of hypercard demos by #mackerel interactive media called "The Mack Stack" that came off like interactive, goofy zines.

#FishCakes made with #mackerel and served with a mixed green salad, homemade #pickles, kalamata olives, and piquant #Peppadew peppers.

The cakes also include diced red pepper, shallots, celery, carrots, plus macerated bread in fish stock, eggs, olive oil, turmeric, chili powder, garlic, salt, pepper. They’re coated with panko and baked on a sheet pan.
