Answering a question about Georgian sauce Satsebeli from my previous post.

This sauce is a relative of another Georgian condiment — Adjika. If Adjika is hot peppers and spices, Satsebeli is a mix of tomatoes, red pepper, cilantro, garlic, and spices.

Like with any traditional recipe, every family has its own which is the best.

During my many summers in Georgia I got to like Satsebeli more than any other food I have ever tried. As a matter of fact, I can eat this sauce with a spoon without anything else.

For years in the US, I was looking for my favorite kind. Tried multiple commercial brands, dozens of recipes from books, YouTube, blogs. None came close.

Not sure how I came up with this one but it is The One. For me.

The sauce doesn’t have to be hot at all — this is absolutely personal. I add a heaping teaspoon of chopped Thai Dragon peppers because this is how we like it.

Some people add vinegar — it didn’t work for me.

Do not use fresh tomatoes. Those from your garden, char under the broiler, peel, and seed.

I stopped adding water — the sauce is so good when seriously thick.

Svanetian salt can be replaced with plain kosher one. Utzkho-suneli can be replaced with another teaspoon of khmeli-suneli. But if you don’t have khmeli-suneli make something else.

SATSEBELI SAUCE
— 15 oz jar fire roasted tomatoes, drained,
— 6 oz jar of tomato paste,
— 1 red pepper, charred under the broiler, peeled, and seeded,
— 3 garlic cloves, roughly chopped,
— fresh Thai dragon peppers, or any hot peppers you like (optional),
— a handful of cilantro — leaves and stems,
— 1 tsp svanetian salt,
— 1 tsp khmeli-suneli,
— 1 tsp utzkho-suneli,
— water (optional)

Combine all the ingredients in a bowl and whizz them with an immersion blender or in food processor to a smooth paste. Add water to the consistency you like. Some people like it watery, I like it thick like sour cream so a big glob could safely travel from the bowl to the mouth.

Apologies if this is a really dumb question. My peppers are ripening and was looking at different wood chips to smoke them with and was really disturbed that you have to pay nearly $10 for a little bag of chips - literally burning money for a little added flavor.

Lamb lyulya kebab with satsebeli sauce, the best sauce in the world.

Not sure what initiated what. Did I make the sauce because I always crave grilled ground lamb? Or did I make kebabs because I needed a vehicle for the sauce?

Ossetian Khabizdzhin — potato and cheese pie — to round things up and because it is so good for breakfast!

The littlest things sometimes make the biggest difference.
Standard guacamole 👆 otherwise - 🥑 cross sliced in shell and scooped out, 3/4 seed removed jalapeno finely chopped (not minced), (I usually do bit of onion but today) chopped scallions, chopped cilantro, just a bit of 🍅 , salt, lime juice. But the tip that so impacted me I remember the book I read that in, is to use just a smidge of dried Mexican oregano (crushed in hand and sprinkled in; thanks Zarela Martinez)

An Afghan Macaroni dish, recipe by Ramin who runs a cooking channel on another platform - I’ve been eyeing up his fantastic food for a while now 🤩

I think I never prepared Afghan cuisine before and I would have never expected the first one to be a pasta dish 🤣 We really liked this one a lot, the lemony quark cream as a first layer on the plate made it really refreshing. Next you add the pasta shells and then the meaty tomato sauce (the sauce was like a chilli with kidney beans). On top you put a little homemade turmeric/garlic oil, dried mint and chopped fresh coriander. The coriander simply shone on it. I didn’t even notice the kidney beans (not a big fan 😅), it was that good!

It’s easy to make and there is a written up recipe in German on Ramin’s video post. If you would like an English version of this, see below, I made one for my own recipe notes.

Since I’m cooking Indian food a lot, this wasn’t a challenge at all, we always have chilli, turmeric, ground coriander, fresh coriander and dried mint in the house. But I had to get lactose free quark because that’s where I draw a line for my slight lactose intolerance.

Forgive me, my Asian friends, for this mash up that probably should not be put together on the same table. I don’t know what I am doing — just love these flavors and textures so much!

And what do we have here?

— Taiwanese beef shank from Made in Taiwan — IYKYK, that’s all I can say. Three days in the making.

— Homemade liang fen — as it was discovered at Xi’an Muslim Quarter. Trying my hand and palate at the Q texture. For seasoning: scalded chopped garlic, scallion whites, shallots, sliced hot peppers, pepper flakes, red pepper powder, and sesame seeds with smoking hot peanut oil. A mix of soy sauce, oyster sauce, Chinkiang vinegar, sesame oil, salt, and sugar. Cilantro and scallion greens.

— Sichuan smashed cucumber salad — it is now ubiquitous — with mixed in greens from the garden which turned out to be very appropriate.

Wahatever you say — it was so good by the way — I stand corrected.
